Marie's Banana Bread

Susan's favourite after-school treat is a one-bowl wonder!

This pudding was born from Susan’s childhood memories: after-school treats of her mother’s chocolate-chip-studded banana bread, lavished with butter or dripping with honey.

Marie's recipe whips up quickly in a single bowl - perfect for after-school snacks or a mid-afternoon pick-me-up!

Banana, Chocolate and Oatmeal Tea Bread

1 large egg

2 bananas, mashed

1/2 cup sugar

1/3 cup oil

1/3 cup oats

1 1/4 cup flour (sifted)

1/2 tsp baking soda

1/2 tsp baking powder

1 tsp cinnamon

1/8 tsp salt

1 1/2 oz chopped chocolate or chocolate chips

  1. Preheat the oven to 350 degrees. Grease and line a loaf tin with baking parchment.

  2. Whisk the oil, egg, and sugar until thick. Add the bananas.

  3. Set aside 1T of the oats and fold the remaining ingredients into the banana mixture.

  4. Pour the batter into the prepared pan. Sprinkle over the reserved oats.

  5. Bake for 45-50 minutes, until golden.

  6. Allow to cool in the tin for a while, then transfer to a wire rack to cool completely before slicing and serving.
